Michael Berkeley's guest this week is the former top chef, award-winning cookery writer and current presenter of the BBC1 TV series 'The Good Cook', Simon Hopkinson. Born in Bury, he was a chorister at St John's College, Cambridge, but left school at 17 to work in the kitchens of Le Normandie in Birtle, Lancashire, under Yves Champeau. In 1978 he became the youngest chef to acquire an Egon Ronay star with his restaurant The Shed in Dinas, Pembrokeshire. In 1983 he was installed as chef at Hilaire in London's Old Brompton Road, before working as chef and joint proprietor of Bibendum on the Fulham Road, winning plaudits for his philosophy of simple, well-judged cooking influenced by Richard Olney, Jane Grigson and Elizabeth David.

In 1994 he published his first cookbook, 'Roast Chicken and Other Stories', which just over a decade later was voted 'Most Useful Cookbook of All Time' by Waitrose Food Illustrated magazine. From 1995 Simon Hopkinson has been a full-time cookery writer: his subsequent books have included 'The Prawn Cocktail Years', 'The Vegetarian Option', and 'Sweetbreads, Liver and Kidneys', as well as 'Week In, Week Out', a collection of stories based on his weekly food columns for The Independent.

His love of music stems from his early choral training, and includes recordings of British choral music by the St John's College choir, as well as Delius's orchestral rhapsody 'On Hearing the First Cuckoo in Spring', Copland's 'Fanfare for the Common Man', French sacred organ music by Alain, and Messiaen's beautiful motet 'O sacrum convivium'.

The programme explores the wide-ranging facets and inescapable power of music: the mystical concept of the music of the spheres, the power of music in childhood and everyday life, music as a psychological tormentor and the beauty of music in performance.

With poems by Siegfried Sassoon, Walt Whitman, Thomas Hardy and Pablo Neruda, and prose by Nick Hornby and Louis de Bernieres. Music to compliment the readings includes works by Messiaen, Purcell, Pergolesi, Charles Mingus, Neil Young and Philip Glass.

In this edition of Words & Music I explore the nature and power of music itself, in all its many guises. Music in society and our own individual lives has inspired writers throughout the centuries. Here are some highlights from the programme…

Robert Herrick’s poem ‘A Canticle to Apollo’ starts the sequence with music as God’s gift to humanity, leading on to Messiaen’s ethereal Des canyons aux étoiles. Going back to the third century, the Roman grammarian Censorinus questions the nature of music which he feels can be understood through embryology, astronomy and mathematics. His assertion that music can go so far as to rouse the legions in war is reflected in Janacek’s bright and bold Sinfonietta.

Another early philosophical concept I have included is Musica Universalis or the Music of the Spheres (frequently accredited to Pythagoras) which associated music with the sun, moon and planets. The 18th century writer, J F H Von Dalberg euphorically describes his vision of cosmic music and a meeting with the spirit of harmony against a back drop of Pergolesi’s Salve Regina in a recording by the counter-tenor, Andreas Scholl.

Moving from the lofty and spiritual to the everyday and the role of music in modern life, I’ve selected an extract from Nick Hornby’s High Fidelity. Record obsessed Rob turns up the volume to escape his disastrous love life, seeking solace with Neil Young and contemplating the music to feature at his own funeral which optimistically includes ‘You’re the Best Thing that Ever Happened to Me’ by the empress of soul Gladys Knight.

Whilst in adult life many of us turn to music in times of love and loss, we often start our musical journey in childhood with obligatory and unrequested piano lessons ... the patient and imaginative teacher in Alastair Reid’s ‘A Lesson in Music’ makes a valiant effort as she encourages her pupil to ‘play the tune again’ with the backdrop of twinkle, twinkle little star, really Mozart’s Variations on ‘Ah vous dirai-je maman’.

Whilst music can often soothe and comfort it can also torment, as in Clara Schumann’s heart rending account of her husband Robert’s descent into insanity as he struggles to compose and express himself in his music. Anne Sexton’s ‘Music Swims Back to Me’ describes an institutionalised young woman as she tries to make sense of her surroundings. As music swims round her muddled mind, the sinister sounds of Ligeti’s Mysteries of the Macabre add to the darkness.

But, I also wanted to reflect how music can draw people together. Jack Kerouac’s lucid description of the Beat Generation and Charles Mingus exuberant ‘Better Git It In Your Soul’ are a vibrant reminder of music’s power to ‘excite souls’ (in the words of Censorinus) and to define eras.

And to conclude there’s the theme of music as a form of reminiscence. Music can powerfully provoke memories and take us back to times past, either real or imagined. In Cecil Day Lewis’ poem ‘Cornet Solo’ the strain of a mere few distant notes take the narrator back to distant childhood days reflected in the haunting sounds of the spiritual Motherless Child …
